So, I've had food on the mind a lot this week--probably because I've started back on Weight Watchers and am determined to take off some of these stress-induced/work-related pounds. I'm trying to get creative with my use of vegetables because that's one of the only ways to increase what I can eat--vegetables are free in points and they are good for you.
One of my favorite dinners (although, it's so many vegetables that I can only eat it once or twice a week) is this one...it's sliced vegetables...one potato, a couple of zucchini, a bell pepper, and a purple onion with a little bit of olive oil, salt, garlic, and pepper. Bake at 425 degrees until you think it's done. Mmmmm.....

I'm also excited about this new recipe for bread and butter pickles. We canned them last night at Young Women's. I'm not a bread and butter pickle fan, but with the bell peppers and onions, these are crunchy and quite tasty!
